Wash and dry all produce. Halve, peel, and finely chop @shallot{1%unit}. Core, quarter, and thinly slice @pear{1%large}. Quarter @lemon{1%unit}.

Heat a drizzle of @cooking oil{1%tsp} and 1 tbsp @butter{3%tbsp} in a #large pan{} over medium heat. Add pear, shallot, @honey{1%tbsp}, juice from one lemon wedge, ½ tsp @sugar{½%tsp}, and a pinch of @salt{to taste%unit}. Cover and cook, stirring occasionally, until pear has softened, ~{5%minutes}. Turn off heat and transfer to a #small bowl{}. Stir in juice from one lemon wedge. Wash out pan.

Evenly layer half the @sourdough bread{4%slices} with @gouda cheese{2%oz}. Top with pear mixture, @white cheddar cheese{2%oz}, and remaining sourdough slices to form sandwiches.

Melt 1 tbsp butter in the same pan over medium heat. Once hot, add sandwiches and push around in pan until butter has absorbed. Cook until bread is golden brown and cheese is slightly melted, ~{4%minutes}. Add another 1 tbsp butter to pan, flip sandwiches, and push around again until butter has absorbed. Cook until bread is golden brown and cheese is fully melted, ~{4%minutes}.

While sandwiches are toasting, in a #large bowl{}, whisk together juice from one lemon wedge, 2 tbsp @olive oil{2%tbsp}, ¼ tsp salt, and @black pepper{to taste%unit}. Add @arugula{4%oz} and @pecans{¼%cup}. Toss to thoroughly coat.

Meanwhile, cook @bacon{4%strips} in a separate pan until crisp ~{5%minutes}. Halve sandwiches on a diagonal. Divide sandwiches, bacon, and salad between plates. Serve.
